Saffron is the most expensive spice by weight, at times worth more than gold, because each thread is a hand-picked part of a crocus flower.

History of trade (saffron)

Why it matters

The idea in context

It takes the stigmas of around 150,000 flowers, gathered by hand in a short autumn window, to make a single kilogram. That extraordinary labour, not rarity of taste alone, is what sets the price. Much of what we call value is really a hidden ledger of the human hours folded into a thing.
