Taste buds contain cells that detect sweet, salty, sour, bitter and umami signals. Many of those cells turn over quickly, which helps the mouth recover from ordinary wear. For a personal comparison, the tongue that tastes today’s coffee is maintained more often than you imagine. The lesson: sensation depends on repair.
